An Easy Summer Dinner

Last night I was craving this pasta, so simple and easy to make, but with so much flavour it is amazing! Saute some Vidalia onions in olive oil ( the sweet ones), clean and roughly chop some swiss chard ( i find the red has more flavour... or maybe i just like the colour!). After the onions are clear and beginning to carmelize, throw in the chard. Stir it constantly on a medium high heat, when it appears it needs more liquid, add some chicken stock, salt and pepper, and red chili pepper flakes. Meanwhile, cook up some linguini. Cook the chard down, about ten minutes. In a frying pan fry as many eggs as you have people, keeping them separate. When the pasta is done, add it to the chard, allowing some of the pasta water in, but not too much you don't want it watery. Plate the pasta, and then top each one with a fried egg, parmigiano cheese, and cracked pepper. Believe me when you take that first bite of cracked yolk with the pasta you will have such an amazing sensory experience! AND it is such a quick and easy dish...
